Bob,
if you are not using workable tracks, it is hard to say how many links to use. It depends on placing the idler wheel and how much sag you want. just make sure you have enough links ready when you start, and use a glue that is not too fast setting. you will need about an hour to finish one side, and make one side per day only. it might be helpfull not to glue the wheels in place, so after you are finished you can take of the wheels and the track for painting. this might be fiddly but in the end it is easier for painting.

or take a 0,5mm drill and carefully drill the track links to make Žem workable. but then make sure not to use turpentine thinners for washing of the tracks. turpentine makes the plastic weak and brittle.
