The closest you can get with the Italeri LAV-25 kit is the Coyote. It will
still require a new engine deck, new rear doors, external fuel tanks,
mounting points for the add-on armour, stowage bins on the turret sides, and
misc. stowage on the hull. Also the wider XML tires (at least these are
available from Maple Leaf Models).
If you want to try a Bison, start with the Italeri LAV-25 Mortar Carrier,
which will still need some work to heighten the rear compartment.
The LAV-III is a larger vehicle, totally different hull which would require
a complete scratchbuild.
