Academy do the KIFV which is a very similar vehicle, and has a full interior. Maybe some of the parts can be adapted?
To make the things easier, I'd make the AIFV version with a 0.50 ACAV "turret" rather than the gun turret in the AFV Club kit.
Otherwise it's a safe bet to say Hobby Fan is bound to make an interior set one day (they are AFV Club's sister company) but it will be expensive if released...
