You could certainly do either of the two modifications you have suggested and in both cases you will have a StuG III G ate with a a 75mm Sturrmkannone. While the Saukopf mantle is a late feature it was neither fully standardised due to backlogs etc of old parts the block mantlet is often seen in photos from the Ardennes on StuG wiith the remote control MG

The Dragon StuG III Ausf G 10.5cm kit you have is essentiall the old DML StuG III G late kit with an extra sprue, metal barrel and PE so its a quite flexible kit.
