Alternately, if you like the paint...

Rub the surface with a faintly-oily cloth. It'll coat the jig enough to stop glue adhesion, but not enough to contaminate the links.

Better yet: use a few drops of cooking oil, and a few spritz's with warm soapy water from a spray bottle and a similar rinse after assembly will banish any oil that does get on the tracks.
