Hi
Painting with oils is often staining over an undercoat. So you need an undercoat (maybe over primer, depending how you do things) that matches the base color you are painting. I'm working on a Dutch Guardsman now. I primered in grey, then put a white or off white basecoat on the gaiters, trousers, jacket etc. The red facings are undercoated in red. All acrylics. Thin applications of oil are applied to tint the shadows and highlights.
And you've stumbled on the easy way to do grey!
I use a light undercoat, then Payne's grey. Wipe over it after waiting a few minutes, and you end up with a perfectly shaded and highlighted grey shirt, trousers or whatever. Easy stuff.
