The Korean War vehicles were the M7B1 Ford-engined variants. The gun was elevated so it could fire over nearby ridgecrests. The conversion was later dubbed the M7B2. In addition to modifying the gun mount, the entire rear end of the vehicle would need to be rebuilt to depict that variant.
As for the M7 Priest, the changes were added incrementally during production, so you could build one with all or some of the changes. The pulpit doesn't need to be replaced, just saw off the bottom portion even with the hull side, patch the rectangular hole this leaves in the armor, and box in the bottom of the pulpit. Some vehicles had the hinged side armor extensions, some didn't, some received the mid production M4 suspension with the straight return roller arm, some didn't (kit has the final upswept return roller arm, available after October 1943).
Best reference out right now is Steve Zaloga's "US Self-Propelled Artillery in Combat 42-45" published by Concord. Covers all the design changes of the M7 series inside and out, and it's cheap, too. Available from Great Models and others.
