James has given you a very good overview and You have the right idea, for the most part...the Revell/Zvezda/DML T-80 kits are the best of a poor lot. The SKIF kit is mostly better with just the Eduard PE and new tracks, but it would still build into a protoype T-80UD becasue of the engine deck.
So the Tamiya T-72 is your best OOB bet. Although, to be honest, you would do the best with a Tamiya T-55 as the T-72 does have a few issues as well. Yeah, I know, it seems to be a never end pile of problems... The Tamiya T-72 kit makes a Polish built East German Army used T-72M Übergangsversion, of which there where 23 made.
