There can be many helps for this problem. Using an extender for acrylics will help (can be found at an art supply store), and using mineral spirits for the enamels will slow the dry time.
Also many times the spit comes from build up in the protective cap on the very tip of the airbrush. On most airbrushes this cap is removable and can be replaced with either a close up cap (usually flutted or more open looking) or just removed.
On my Iwata if I am going to do a larger area or spray longer than a few moments, I simply remove the protective cap. If you do this be very careful because the fine needle tip can be easily damaged. As soon as you are ready to set the brush down re put the cap back on! This is an old trick used by illustrators to prevent spitting.
Also many times trying to do the whole project in one spray session is not a good idea. Take a break when you get nervous of a spit, and clean the brush, refill, and start again.
