What kind of paint is it? When I was painting with acrylics I used to use isopropyl as a thinner. This sped up the dry time. With enamels I use lacquer thinner and this certainly sped things up.

I don't know about the food dehydrator, seems kind of a silly thing to get for model building! Perhaps during the paint drying phase you could do the construction on a new model?
