I find that putting the tracks on Tamiya kits to be very easy. The road wheels on most of Tamiya's kits will pull right off, so just pull the sprocket off, ease the tracks over the remaining road wheels (and return rollers if the kit has them) and replace the sprocket onto the model, being careful to keep the 'teeth' in the holes and 'rolling' the sprocket into place - then just push it down onto its' peg and you're in business!
As for paint, I usually mix up a blackish, rusty, earth color and spray it on the tracks, a little washing and drybrushing and they look pretty good!
