A single action is where the button on the airbrush controls only one function -- AFAIK always airflow. You must control paintflow manually at the tip. The advantage of this system is that there's less to worry about, its usually easier to clean (fewer parts) and are often cheaper. The disadvantage is that you cannot control paintflow while airbrushing.
Double action controls both airflow and paintflow. The advantages are that you can vary how much paint you spray WHILE spraying. The disadvantage is usually they are more expensive and complex to clean.
IMHO I would start with a double action rather than a single action. I started with the latter, but find the former MUCH more useful, and not that much more difficult to use. I like the Paasche VLS, though opionons vary...
