Hi David,
I was in Israel for the Yom Kippur war (Oct. 1973),as a civilian volunteer and had alot of close-up and personal views of Israeli armor on the Golan Heights. I think that a nearly perfect match for the tan color used on Centurions and Halftracks for that period is: Testors Model Master, Afrika Dunkelgrau RAL 7027. This paint is available nearly everywhere the line is currently sold. Don't be fooled by Testors new namefor this color. Before being enlisted as a German color, it was just plain old "desert tan". I have matched this color on my models to photos I took back then, and in 35th scale it's dead-on. Abit of dry-brushing with a pale "Sand" (avoid the yellowish colors, go more for a beige-sand) and you will have an exact match.
Later Israeli vehicle colors (from about 1975 on) were painted with a tan color that had a greenish or grey appearance whenseen in certain lighting conditions (dawn or dusk).
