Dry pigments are actually crystalline, and depending on the pigment, of differing sizes and shapes. Carbon crystals for example, come naturally in three types, relatively spherical soot particles , flat graphite, and tetrahedral diamond. I'm not a chemist (but I am an artist, and have some interest in the composition of my materials), but I imagine the smaller the size of pigment particle (soot or alizarin crimson, for example) the better it 'sticks' to a surface. With larger aggregate crystal sizes (earth pigments and 'mineral colours') one needs to grind these down to a smaller consistent size to be of better use.
