Kurt,
You hit it right on the head. It 'looks cool'. Most tank in World War II (especially Shermans and T-34s) were around long enough to get that weathered. But this really doesn't matter. The whole idea is to appear convincing and give the illusion of realism. Plane modelers have been doing it for decades with their 'panel lines'. Most aircraft you could never see the contrast in panel lines especially in 1/72nd scale but it does add a visual flair to the model. I too have been caught up in this 'chipping' and excessive weathering. Not because it represents real vehicles, real use or real anything. But it does breath life into a minature that makes it look more convincing. Figure modeler do it also with extreme highlights and shadows. It's all for a dramatic effect. Is it real? Is it true to the facts? Is it accurate representation? Probaly not but it does 'look cool'.
