With more complex kits, especially those with interiors, you really are going to find yourself assembling and painting the subassemblies first. I've brought out my airbrush about 8 or 9 times so far on my Sherman III build.
Things that really do require painting in segments are
-backsides of suspension units such as Sherman bogies
-roadwheels, particularly interwoven German types
-interior stuff
-tracks
-lower hulls before adding sand shields and wheels
Honestly, one of the best sources to learn the art of masking and painting very complex models and camo is to read articles by airplane and especially ship builders. It's a much more integral part of those types of modelling, especially if you're doing a dazzle job on a battleship (YIKES!).
