Once I got used to gravity feed, I haven't gone back. I just use an eyedropper to fill the airbrush, and if I run out I just use the eyedropper again to refill it. When I have to mix custom colors, I mix them in an empty paint jar.

I've found gravity feed airbrushes to work much more reliably at lower pressure, and much easier to handle. Though you do have to be careful not to tip it over and drip paint out of the cup.

And the cleaning is SOOOO much easier. I use mostly acrylics, and when I'm done I just clean out the paint cup with a Q-tip and some rubbing alchol, then I spray some through and wipe off the needle.

The splatter may have to do with excess moisture from the compressor. If it's really humid and you don't have a water trap, it will cause that.
