Regarding the drying time - tamiya thinned with their acrylic thinner dries faster because the thinner evaporates faster into the air (due to its chemical composition), the water takes much longer time. The difference is even bigger when airbrushing compared to painting (because the paint is dispersed and reacts with air on a much larger surface).
Re Tamiya vs. Vallejo - I also use tamiya for airbrushing (my attempts to use it for painting didn't end up well...) and Vallejo only for painting the details and figures (for which it is great and I use only normal tap water).
Only when airbrushing metallic surfaces (e.g. Friul tracks) I use Humbrol enamels or lacquer colours, as they stick much better to the surface than acrylics.
I use Iwata HP airbrush and it works very well. But as you pointed out, it just takes a bit of time and experience (and experimentation) to figure the correct combination of air pressure/paintflow setting/amount of thinner used/distance of the nozzle from the surface ...
