Hi Paul,
On the whole I try to assemble the kit as fully as possible, before I start painting.
However when there are items that I wish to paint before assembling, I remove the part from the sprue, fill and clean up the individual item and check for fit; then I will use a mixture of methods to hold the parts for painting. I use Tamiya tape, doubled over so the sticky side is up, Blu-Tack has its place and for some larger items, I sometimes tack them to a piece of old sprue, with a tiny amount of super glue, which you can gently snap away at the end.
Using these techniques, I can manage to deal with most parts that require painting and finishing before attachment.
I have found that when painting detail items on the completed build, you can often find ways to mask them, with things like post-it-notes or a small piece of paper.
I hope this gives you some creative ideas.
