I teach a course in colour perception here at RIT.
And we have a Ph.D. program in Color Science.

Lighting, surface characteristics, the human visual system and myriad other factors affect our perception of colour.

I can send a syllabus and some book recommendations to anyone who really wants to know about colour perception.

And it makes me laugh when folks try to match colors exactly. The only way would be to have a time machine, and the ability to recreate the lighting, atmospheric conditions etc...

As a side note, yellow ochre oil paint matches dunkelgelb very well for the reasons mentioned above, it's an earth tone.
