Except of course heat causes optical distortion as well (think mirages and the "wet" look you get on a hot road). the biggest factor imho are the depth of scale (as has already been commented on) where most models are displayed as small objects seen up close, therefore true to "real" colours are more important than "distance effect" colouring. Lighting plays by far the biggest effect, in two ways:
I once saw a review of a model painted to take into consideration where the sun was lying in relation to the scene so there was this incredible shadowing effect on the vehicle, (a paint job so far out of my ability to be almost unbelievable)
But the biggest impact of lighting has already been touched on, that is the light source used while painting the model Vs the display lighting.
ALL artificial lighting has a colour temperature and a % accuracy to natural daylight. (colour rendition) For instance a Fluorosecent tube will have a code of two or three numbers IE: 85 or 986 etc, the first part typically refers to accuracy so an "80" series tube is 80% accurate to daylight a "90" is 90% etc. the second part is the colour temperature in degrees Kelvin. so an colour 85 is 80 percent accurate and is colour temperature 5000 degrees kelvin (which is quite warm).
Now i have never been to a model show as such, and am just a beginner at this painting game, I tend to paint under incandescant lamps BUT only if spray in natural daylight (the boss won't let me spray in the house). but if you are going to use fluoro lights to paint under you should look for the best colour rendition values you can find, 90s are better than 80's etc).
