I have used Easy Off for many years and, while it doesn't hurt the
plastic in any great way, it is somewhat more brittle afterwards.
Sometimes the plastic is stained if the paint has been on a long time,
but it almost always gets off all the paint. The warning to use rubber
gloves should be taken very seriously as it will eat away bare flesh if
not washed off immediately and even then will destroy the top couple of
layers of skin leaving them badly chapped (read: I have done both and it
ain't fun!).

Nominally it doesn't have any effect on firmly bonded parts, but it does
apparently make the bond somewhat more brittle; like the plastic, but
more so. Small parts and those lightly bonded sometimes come off more
easily, but not always. Don't try to split joints with too much force as
you can split the main plastic.
There is nothing I know of that will "debond" proper, solvent welded joints.
