Wow, Jim, you couldn't have picked two worse kits to build in 1/72nd if you tried. Both of those kits are awful, and in no way are representative of the latest crop of 1/72nd scale armor kits available. As mentioned in a previous response, the On The Way! website is an excellent source of kit reviews (I may be a bit biased here), and there are several others that are listed on the Links page of OTW.
Very briefly, look for kits by Revell, UM, PST, Dragon and Trumpeter. Also, Italeri has numerous excellent kits; you just picked a bad one with their Pz IV. There are also a dozen resin manufacturers that make absolutely outstanding kits as well, and dozens more that make mediocre kits.
You ask a very broad question that is difficult to answer in any great detail. Perhaps if you are looking for a decent kit of a particular vehicle, I can make specific recommendations for you.
