John,
I can totally relate to your problem. I only started photographing my models a year ago or so. I couldn't get anyhtign to come out right. I found that buying a couple pieces a poster board at the art supply store helped a lot. Then I found that taking photos in the shade in the afternoon or morning worked well so I didn't need a ton of extra lighting.
Finally, I've recently found that taking a photo from a little further away and then cropping it is a better way to get good depth of field while still showing the details.
