Hello Ian:
Well you might want to look into actually buying a DSLR.
The Nikon D-70S isn't all that expensive anymore, yet it is a really good camera.
The twin flashes you are talking about are used from a Slave unit or remote chord attached to the hotshoe of the camera body. For model work you don't really need to have two flashes, however if you buy the D-70S it accepts flash untits that are not all that expensive anymore like the SB-20, or SB-50.
Sigma corporation has just released a killer 70mm Macro lens that has blown away all of it's competition (this inlcudes Nikon and Canon).
I currently shoot with either a Nikon D200 DSLR, or a Nikon D2Xs DSLR. Both of these cameras are really expensive but worth every penny. I use Sigma, Nikon, or Tokina lenses and have a SB-800, and SB-600 flash units.
The Depth of Field you are talking about is done by setting the F stop. DLSR's are easier to do and usually have ore depth of field as most point and shoot only go down to f/8. I have lenses that will go down to f/40, but I don't recommend this.
