Photo-etched parts are great for tool clasps, engine grating, stuff made from angle iron, etc.

As for photo-etched fenders, a lot of the usefulness here depends on the type of metal used. The thicker brass fenders are pretty useless if they need embossing like the Pz.38(t) (Marder) fenders. Voyager has a set for the Hetzer that they did in very thin copper and they were amazing, they needed embossing too.
