I bought a Canon S3 IS for 300$ in the spring, it's the same class (bridge camera) as the recommended Fuji. It's a spectacular camera, only the SLRs are better. Macro and SuperMacro can be used, 6 megs, large lens, 12 zoom for other purposes, etc. It's a bit over your budget but really, 300 is a bargain for something this versatile.
