Only twice that I can recall. Once was Tamiya's old Sd Kfz 250/3 - couldn't cope with the separate track links, lost all patience, off it went. In my defence, I was something like 15 at the time.

The other time was Italeri's Do 24T. All was going swimmingly until I had to attach the wing to the struts. None would stay up - the wing tipped to one side, tipped to the other, even tipped backwards, and all the struts fell off. Bloody butt-joints. So, again, off to the round display case in the corner. I was old enough to know better by then.

Since then, I've grown a lot more patient. No point getting het up, just step away for a bit - hours, days, weeks, whatever it takes. Plus, I've lowered my expectations. To get a kit finished at all is enough to make me happy now. Everything else is a bonus.

(For my second Do 24T I'm going to use jigs, and add pins to the joints, and all will be well. He says ...)
