Depends where you are in sydney but here's a couple
Wings n Things have stores at Dee Why and Gladesville, they're mainly radio control, but they do stock kits by the major manufacturers and can get any kit that's currently in production.
Chatswood has a place on Victoria Rd called Avenue Hobbies, Train to Chatswood and walk down Victoria ave from the station - about 10 minutes walk
I'm in Sydney myself, and you know what females say about the unbuilt kits one may have in stock...
