The Pz.III and Pz.IV chassis vehicles had 5mm thick hull spaced armour while the turret was 8mm. I don't know about the Panther or other vehicles.

0.010" sheet styrene is fine in 1/35th scale, it is a little thick but anything thinner will warp when painted or glued.

The mounts where made of soft steel welded together, the frame was bolted to the tank and the armour panels loosely hung from the racks. The panels would get knocked off before the frames bent. It is common to see the frames bend and ripped off the tank. The armour panels where ridged armour and would not bend.
