Though I have yet to find proof in the way of a photo, records show that the cargo carrying Kubelwagen (and Beetle, which used the same box body) were produced from early 1945 on, and was origionally an ambulance. I have seen photos of them dated from 1944-45, but most of the photos are factory pictures, not combat photos. But VW was also producing a pick-up truck version of the beetle as early as 1941, and were always experimenting with getting the most use for their chassis(they even came up with a tractor-trailer version), so who knows. Also, many unit motorpools modified vehicles in whatever way they saw fit to perform whatever dutys were at hand, which adds to the mystery. I say build it if you want, and if anyone says your wrong, tell them to prove it. As long as you are happy with it!!!
