Roberto,
About the remanufacture. The photos seem to indicate that the tanks had
all of the remanufacture features possible with the exception of the -E9
suspension widening one, which, according to Hunnicutt, the M4A3 didn't get.
(I would love to see one of those in an overseas in action shot, but... I
suspect that sometimes you can say never) The autobann picture on the site
shows most of the major features:
applique
fenders
stowage rack on the rear plate

The turret stowage is covering up the .50 caliber gun stowage pintle and
barrel stowage bracket.
A travel lock would appear on the glacis.
The turret would have applique added if it was the early casting with out
the reinforcing armor cast in, i.e. low bustle with the pistol port and oval
loader's hatch.
The gun mount would be either the M34A1 or an M34 modified to fit the direct
site telescope (which would be interesting to model)
The siren would be in the final position to the left of the left headlight.
The commander's hatch would have hold open catches and the later folding
barrel clip.
According to Hunnicutt, some remanufactured tanks received the all around
vision cuploa, but none of the three seem to have that.

What kind of glacis and engine deck does the Peddinghaus kit have? Which
kit are you planning on using to convert?
