Hey James,
further to what Neville said, Squadron Signal Stug III Walkaround states that the jack block was hardwood. I am sure most, if not all, jack blocks would be similar in nature to each other. But as Neville pointed out, it all depends on the time of the war, and what was available. I think you cannot go wrong assuming it is made of a hardwood.
