Difficult question.
I assume that you want to build a Churchill AVRE from World War II?
A company called KK Castings produce a simple conversion set for the Tamiya Churchill. It has a new hull front and a new turret. I think that Resicast may do one as well, but I can't be sure.
The Tank Museum at Bovington offer a very good set of stowage plans and sketches as a plans pack

The wartime AVREs were based on Mk III and Mk IV Churchills. The Tamiya Mk VII would need some alteration to be perfectly accurate, but it's close enough for most purposes.
There was a post-war Churchill AVRE based on the Mk VII Churchill, but this entered service in 1956(?) and is a very different animal.
