I agree with Brian that the Heimdal books are the best collection of photos out there. Simply excellent photo reproduction too.
There are a couple of other good books, too.
Vanwell has recently reprinted George Forty's 2 volume "Afrika Korps at War". This is a relatively inexpensive softcover collection of photos and surprisingly the photo quality is much better in the reprint than the original.
George Bradford's "Armor Camouflage and Markings, North Afrika 1940-1943" is an old out of print gem that is nothing but photos and colour plates of Allied and Axis armour in Africa. Worth finding if you can.
There is also a volume in the Patrick Stevens/ Aztek WW2 Photo Album series entitled "Panzers in the Desert"- good selection of photos but some of the captions are suspect.
And finally there is Uwe Feist's old Aero armor series booklet "Armor in the western Desert".
Remember- you can never have too many references!
